INDIAN GOOSEBERRY (USIRIKAYA OR AMLA) PICKLE:



Ingredients :

10 - Large amlas ( usirikaya )
Lime - 3(big size)or 5(small size)
1/2 cup - Red Chilli powder
1/4 cup or enough - salt
2 tsp - Mustard powder
1 tsp - Fenugreek powder
1/2 cup - Oil

For tempering :

1 tsp - Mustard seeds (avalu)
1 tsp - Minapappu ( Urad dal)
1tsp - Cumin (jeelakarra)
1(big one)- Garlic
3 or 4 - Red chillies
1/2 cup - Canola Oil

How to make:

1.First wash and wipe dry Amlas without any trace of water.

2.Take a deep pan. Add 1/2 cup of oil, on medium heat, add amlas. Cook amlas till they turn tender and changes it's color. Set aside and let it cool to room temperature.

3.Dry roast fenugreek and mustard seeds then make powder of them.

4.Now add red chilli powder, mustard ,fenugreek powder, salt and mix well.

5.Squeeze out all the juice from Lime .Keep it aside.

6.Take another pan and on medium heat, add 1/2 cup oil.

Do the tempering in the order given above.

7.On medium heat add mustard seeds when they start spluttering add urad dal then add cumin,garlic cloves,redchillies.Stir it for a second then turn off the flame.Let it cool to room remperature.

8.Finally add lime juice (don't add lime juice when everything is hot).

9.Store the pickle in an air-tight container.

10.Now have usirikaya pickle with hot rice and ghee....

can i put olive oil instead of canola oil...because i am allergic to canola oil....
