EGG & DRUMSTICK CURRY:

Serves – 3 or 4 persons

Ingredients:

Fresh drumsticks - 5

Finely chopped onion(big) - 2

green chillies (chopped) – 2

Tomatoes chopped – 3-4

Eggs (boiled) – 4 or 5

coriander leaves (chopped) for garnishing

Red chilli powder – 1 tsp

Salt to taste

water – 2 or 3 cups

oil – 3 tbsp

How to make:

1.Cut drumsticks into 1″inch long pieces.
2.On medium heat heat oil in a pan and add chopped onions and chillies and sauté till onions turn brown.
3.Now add red chilli powder, chopped tomatoes and cook until the tomatoes become soft and mushy .
4.Add salt, drumsticks ,eggs and 2 or 3 cups water, cover the pan and allow it to cook on a low flame. Keep stirring in between till done .
5.Add water if needed . Cook for couple more minutes, turn off the heat garnish with coriander leaves. Serve hot with plain rice or roti.
